Boiling an egg may prove to be a challenge. After all, overdoing it has catastrophic results, underdoing it leaves you with a runny mess, and if the water isn't boiling properly you'll never time it right. Someguy suggested to me a while back that I should instead STEAM eggs and I have never boiled an egg since.

You will need a steamer, of course, but these can be nicely improvised in the following manner:

Take a stewpot, add a couple of inches (or a few cm) of water. Insert a small metal bowl, add just enough water so it stops floating. Place a collander inside the metal bowl. The collander should be elevated above the water, allowing you to steam your eggs (or vegetables, or anything.)

  1. Bring the water to a boil.
  2. Without burning yourself, add eggs to the collander.
  3. Put the lid on, steam for nine minutes.
  4. Remove from heat, remove eggs to a bowl of cold water. Running the bowl under the tap will help too. This will cause the shell and the membrane around the egg (as well as some of the egg) to cool off and contract so you can easily peel the egg.
  5. Crack the egg on the heel of your hand, peel it, add salt and pepper, enjoy.
